It is my belief that organic is better for our environment, for the people who work the farms, better for the ecosystems around the farms, and most of all, BETTER FOR YOU because ORGANIC DELIVERS THE BEST TASTE.
My soybeans are not bio-engineered. Bio-engineered simply means that the crops processed into ingredients were easier for farmers to grow, because of resistance to bugs, disease and weeds. Half of the soybean crop and a third of the corn crop in the U.S. these days contain transplanted genes.
My Soybeans: Identity Preservation
Identity preservation (IP) is a process by which a crop is grown, usually under contract, and handled, processed and delivered under controlled conditions. By instituting this process, I'm assured that the crop has maintained its unique identity from farmgate to end use.
The farmers chosen must adhere to crop rotations. This breaks up disease and insect cycles. Planting IP crops next to any potential sources of genetic contamination is avoided. Using the right seeds and planting clean seeds is mandated. Equipment must be carefully cleaned to minimizes the risk of contamination by other varieties.
The removal of weeds without synthetic pesticides or fertizers is performed. Typical growers use chemicals that infiltrate the soil of the field, contaminating the soil and often underlying aquifers. Most of these chemicals used are petroleum-based and persist in the environment for extended periods of time.
Keeping the harvest clean includes both equipment and storage facilities. Storing carefully and clearly to prevent mix-ups when the grain is delivered and finally delivery of clean seeds. Handling and transportation equipment are also inspected and cleaned prior to loading, hauling and delivering.
I buy only from American farmers and from co-operatively owned farms where revenue, along with tools, mills, mulches, and organic methods are shared collectively. The premium I pay for the best soybeans goes into sustaining organic farming principles, rewarding farmers for their higher quality beans, and helping to support these growers and their families.
The next step is the roasting process. Before the days of mass production coffee was roasted slowly in small batches at relatively low temperatures. This technique produced a coffee with a richer flavor and aroma but was very time and labor intensive. It is for this reason that few are willing to slow-roast today. I am one of the few. This allows for accurate control and prevents over roasting which creates a "burnt" taste.
Time for roasting can vary based on differentials in weather, air pressure, air density and moisture affect coffee roaster efficiency, just like they affect the efficiency of an automobile or airplane engine. For example, higher altitude or humidity will require more roasting time to create the same soy coffee as a lower altitude, low humidity environment.
After roasting the soybeans are allowed to cool and then vacuum packed to prevent staling and ensure maximum flavor retention. My focus is on delivering the highest quality soy coffee. I work hard at it and believing it comes through in the cup. I enjoy my Soyfee, and I'm sure you will too.
